Title: O-Rings for head gasket?

I’m building my second Upshur Farm Engine and was looking for another option for the head gasket. I was looking at using a Viton O-Ring to seal the head. Has anyone used this method for a head gasket?

My Upshur Farm Engine seals fine with the aluminum head against the steel cylinder.
A Viton o-ring should work fine-these engines don't get that hot. Harbor Freight has a 180 piece assortment for 9.99 (before the coupon!)
