Title: thermocouple

I purchased one of these thermocouple's some time back.  https://www.amazon.com/gp/product/B00UWVZAY8/ref=ppx_yo_dt_b_asin_title_o05_s00?ie=UTF8&psc=1

It has 9 feet of lead, and I only need about 1 foot.  Is it OK to cut this down with out effecting the reading.

Yes but don't damage the insulation on the wires and make sure both wires are the same length or it will influence the accuracy of the measurement.

The length won't make any difference. There is no current flowing and the thermoelectric voltages occur at the interfaces between different metals, not within the bulk material of the conductors.
