I'd never heard of a beignet before. Listen to the world, you'll find a recipe! Quite a few actually. Thanks Eric.

Thanks Hugh, but, Don would be the real expert. I'm just a wanna be coon ass that loves the food. Gotta have coffee with chicory (read real, real, real strong) to wash em down too. And again Don, great looking tooling.

One of my favourite coffee drinks is milky camp coffee, it has 26% chicory in it.

If you can get it, give it a try.

Hugh.
Hugh the Beignet is one of our Louisiana Puffy pastries traditionally served in New Orleans. The word beignet can be traced back to the early Celtric word, "bigne" meaning "to raise". Its the orgin of the French"beignet," meaning "fritter." Beignets are made from raised yeast dough that is deep-fried. Kind of like doughnuts. My mom use to make them for us, when we were kids out of bread dough. You sprinkle power sugar on top and you can stuff them with cream and perserves.

Thanks all for your interest and kind comments.

Jim, glad to see you back on your feet buddy and that all went well. Now you can get back to making engines again.
